What are the receiving temperature limits for frozen and fresh, and how do I change them?
For a location in the United States, the tablet proposes the FDA Food Code receiving limits: fresh TCS food at 41 °F or below, frozen food at 0 °F or below, i.e. frozen solid (Food Code 3-202.11). Dry goods have no temperature limit. The limit is shown next to each line while you record; above it, the line turns red, “Out of range”.
To tighten a limit, go to Settings › Account & establishment › Regulatory thresholds (the “Regulatory thresholds” line in the Deliveries settings takes you there too): “Reception: frozen goods maximum temperature” and “Reception: fresh goods maximum temperature”. Change them only if your food safety plan or your health department requires it; “Restore regulatory values” puts the defaults back. Each delivery keeps the limit that applied on its day: changing a limit never rewrites the past register.
Tip: a location in France gets the French tolerances instead, in °C (frozen ≤ −15 °C, fresh ≤ +4 °C).
