How do I log a cooling?

Open the Cooling module. The entry panel sits on the right of the tablet (on a phone, tap "Add a cooling"). Naming the dish is optional; it mainly helps you find it in the register later.

  1. Under "Start", set the temperature with − and + (the tablet suggests 135 °F) and the time the food came off the heat. Date and time change with a tap.
  2. Under "Intermediate stage", enter the temperature and time when the food reached 70 °F: the rule shows underneath (≤ 70 °F in ≤ 2 h).
  3. Under "End", enter the temperature and time when it reached 41 °F (≤ 41 °F in ≤ 6 h in total). The duration and the verdict show right away.
  4. Tap "Add to batch". Several pans came out of the blast chiller or walk-in together? Enter them one after another: they stack under "To validate".
  5. Tap your first name under "Who", then "Validate (2)": the whole batch is saved with your name and the time.

You can enter everything once the food is done cooling, by setting the start time back to when it came off the heat: the register uses the end of the cooling as its reference, not the moment you typed it. With no Wi-Fi, the entry is kept on the tablet and sent on its own when the connection comes back.

Tip: no blast chiller? Ice bath, shallow pans, ice paddle: the tablet does not ask how you cool, only the start, the stage and the end.
