How do I change the cooling thresholds (two-stage cooling, times, temperatures)?
An establishment in the United States gets the FDA Food Code rule out of the box, in °F and in two stages: from 135 °F to 70 °F within 2 hours, then to 41 °F within 6 hours in total. That is why the entry panel shows an "Intermediate stage" between start and end. An establishment in France gets its own rule instead (63 → 10 °C in 2 h, one stage).
If your food safety plan or your local health department uses other values, the manager changes them under Settings › Regulatory thresholds, section "Cooling":
- "Cooling: suggested start temperature": the value pre-filled under "Start".
- "Cooling: maximum end temperature" and "Cooling: maximum duration": what triggers an out-of-range verdict.
- "Cooling: intermediate stage temperature" and "time allowed to reach the intermediate stage": fill in both to keep two-stage cooling, or leave both empty for a single-stage rule.
The regulatory value for your country stays displayed under each field, and "Restore regulatory values" brings them all back with one tap. Tap "Save". Every cooling keeps the threshold in force on the day it was logged: changing a threshold never rewrites the past register.
