The cooling took too long or ended too warm: what happens?

The verdict is calculated, not declared: as soon as the intermediate stage misses 70 °F within 2 hours, or the end misses 41 °F within 6 hours in total, the line turns red and reads "Out of range". The cooling cannot be added to the batch until you say what was done.

  1. The block "Out of range: corrective action required" opens under the entry: tap one or more of the suggested actions, or describe yours under "Corrective action (free text)" (e.g. back in the blast chiller, split into shallower pans).
  2. If you wish, add the "Cause (optional)" (blast chiller broken or saturated, no blast chiller available, started too late…) and "What happened to the product (optional)" (discarded, chilled again…).
  3. Add to the batch and validate as usual.

The non-conformity goes into the register with its corrective action, and the manager gets it on their phone. Under the FDA Food Code, food that misses either stage must be reheated to 165 °F and cooled again, or discarded; whichever you do, record it here.

Tip: the list of suggested actions is yours to complete under Settings › Modules › Temperature log › "Corrective actions", with "Add a corrective action"; it serves every module.
