The fryer oil log, one tap per tank, no greasy notebook.
Every fryer tank has its polar-compound limit. The crew types the reading from the oil tester, or marks the oil as changed, and the log fills in with the time and a first name. Oil over 25 %, and the tablet asks what was done about it.
No credit card. Any off-the-shelf Android tablet will do.
A fryer oil log that keeps itself, reading after reading
Tired oil shows in the color, smells in the hood, and proves itself with a number. What you have to show is that you test, that you change the oil on time, and that it is written down.
What your HACCP plan expects
The FDA Food Code sets no number for frying oil, but it does expect food to be wholesome and your HACCP plan to say how you decide when oil gets changed. Most kitchens and chains use the 25 % polar-compound limit used across the industry, and a tester that reads it in seconds.
The trouble with the notebook
The pad next to the fryer ends up soaked in oil, and the same question comes back every week: was the oil changed Tuesday or Thursday? Who tested it? The reading creeps up without anyone noticing, and the day you have to show the log, you have stuck pages and gaps.
What Tracito changes
Every tank is named, with its limit. Every reading and every oil change carries the time and a first name. A reading over the limit cannot be saved without saying what was done. The log writes itself and comes out as a PDF in one tap.
Set it up once, then test in ten seconds
The Tracito way: you set the kitchen up at the start, then the crew only taps and validates. No options on screen during service.
Your tanks, with the limit
When you set up, you name your fryer tanks in the order of the line: a single fryer, or the double fryer on the hot line as two tanks. The 25 % polar-compound limit is applied out of the box; you can tighten it if your HACCP plan or your brand says so.
You also say how often each tank gets tested: after use, at every meal period, once a day or once a week. All of it can be changed later from the tablet or from your web account.
Test: the reading, the name, validate
During service, a crew member dips the tester in the oil, reads the number, taps the tank on the tablet and sets the value with − and + (or types it). With several tanks, they chain the readings and one Validate saves them all, with their first name and the time. An optional note keeps what is worth saying: "oil filtered", "tank half full".
A reading over the limit turns red and cannot be validated until someone says what was done: oil changed, tank taken out of service, oil filtered. The manager gets a notification on their phone. The tablet works without Wi-Fi: the reading goes out on its own once the network is back.
Oil changed, in one tap
When the tank gets fresh oil, you tap the tank, switch to the "Oil changed" tab, validate. No number to type: the change is logged as is, with the time and the first name, and the tank's tile shows it until the next reading.
That answers the question that always comes back: "when was the fryer oil last changed?" It is in the log, with the name of the person who did it.
The log writes itself
Every validated reading and oil change joins the module's register: time, first name, tank, value, compliance, corrective action. Nothing gets erased: a cancelled line stays visible, crossed out, with who cancelled it and when.
The register exports to PDF or goes out by e-mail, for the period you pick: today, this week, this month, this year, or any two dates.
You know, without asking
- The day on one screen. What is done, what is left, what is overdue, meal period by meal period. A tank not tested by the end of the period, the tablet reminds the crew.
- A notification when something drifts. A reading over the limit lands on your phone with the tank, the value, the person and the action taken. You choose the quiet hours.
- Inspection mode. Hand the tablet to the health inspector: a read-only view, every register dated, the period's non-compliances, the complete file as a PDF.
- The summary by e-mail. Every Monday and at the start of each month: what was done, missed and out of range, module by module.
- From your web account. The same registers, the full settings, several locations, a consultant invited in read-only mode.
It fits your kitchen, not the other way around
The limit, set once
The 25 % polar-compound limit comes out of the box. Some kitchens change the oil at 20 % to keep fries golden, and some state or county health codes ask for it: the limit is set in Settings › Limits, and every reading keeps the limit that applied that day, even if you change it later.
A rhythm per tank
The hot-line fryer gets tested at every meal period, the donut station tank only after use. Each tank has its own rhythm; the task shows up on the day's list at the right time, and as overdue if it is missed.
Missed checks get cleared, never silently
Fryer off all Sunday? The manager can clear the overdue tasks by giving a reason. It is written in the register: the log shows that a test was missed and why, not a hole.
One tablet for the whole crew
No account or password per person: everyone picks their first name when validating, and that first name goes in the register. Several tablets and phones can be used in the same kitchen, each one sees the others' readings.
