How do I set the services, the retention time (3, 5 or 7 days) and the disposal reminder?

The manager sets the module up once; after that the crew only validates. Until the setup screen has been opened, a banner on the module screen says so and no task is expected.

  1. The module is off by default for a restaurant setup sheet. Go to Settings › Modules, switch Retention samples to Enabled, then tap Configure this module (or the Configure button at the top of the module screen).
  2. Services concerned: tap the meal periods where samples are pulled, lunch only for a school cafeteria, lunch and dinner for a care facility. A task is expected at each of them; at least one always stays selected.
  3. Retention: pick 3 days, 5 days or 7 days. The FDA Food Code sets no retention time; 5 days is the usual practice for caterers and institutions, and the default here.
  4. Options › Disposal reminder at D+N: turn it on if you want a “Remove the retention samples of …” task on the home screen once retention is over. Pointless if you already rotate containers on a board.

Each setting is saved as soon as you tap it. A sample keeps the retention time in force the day it was pulled: switching from 5 to 7 days does not move the removal date of containers already in the walk-in. The same settings can be changed from your online space.
