How do I log the retention samples for a meal period?

From the home screen, open Retention samples. Under Today's services, each meal period you set up shows To do, Done or overdue.

  1. Fill and wrap your sample containers (about 4 oz per menu item, dated, kept in the walk-in or reach-in), then tap the service on the tablet.
  2. In the panel, list the items if you want under Dishes set aside (optional), for example “beef stew, rice, apple pie”.
  3. Pick your name under Who; the time is already filled under When.
  4. Tap Validate. The service switches to Done with the time and the name.

One entry per service and per day. If you tap a service that has not started yet (dinner at 1 pm), the tablet says so but lets you go ahead: samples are often pulled at plating. A forgotten service stays overdue: tap it to catch up, and the register shows it was logged late. With no network, everything is saved on the tablet and goes out on its own once the network is back.

Tip: the FDA Food Code does not require retained samples, so the module is off by default for a restaurant. Caterers, schools and care facilities turn it on in Settings › Modules (see the setup question).
